Spicy Asian Cuisine

Spicy Chicken Stir Fry


I made this wonderful dish for my mom using sesame seed oil, carrots, onions, zucchini, edamame, chicken, udon noodles, soy sauce, teriyaki sauce, sriracha sauce, minced garlic, and topped with sesame seeds.  We paired this dish with Blufield riesling and it was phenomenal.




Spicy Edamame


These are SOOOOO easy to make and are truly delicious.  All you need is thoroughly cooked edamame, sesame seed oil, soy sauce, and sriracha sauce.  I didn't measure out the ingredients, so I would recommend just seasoning the seeds to taste.  If you really want to get fancy, top the dish with sesame seeds.  Be sure to have a beverage ready, because these are extra spicy!

A Very Merry Christmas

The annual Christmas Eve party at my mom's house was a success, as always.  We were fortunate enough to have the company of family and friends.  The food was amazing too!  My favorite was the baked holiday brie...or the Christmas wreath cookies. YUM!


Christmas day was also a lot of fun; apparently I was a good kid this year!  I had a great morning with my mom and her boyfriend.  Then I went to my uncle's house for lunch and another family celebration.  It's always so fun to be around family during the holidays; a great reminder of all that I have to be thankful for.  Hopefully your holiday was wonderful too!

Christmas Cocktails

I was able to have some friends over last night to kick off the holiday season with some festive Christmas Cocktails.  Below is a Santa Shot.  They're delicious with equal parts Grenadine, Creme de Menthe, and Peppermint Schnapps.  I would recommend putting less Grenadine though.  Overall though, the night was deemed a success.

"Studying"

Finals have officially started, but fortunately we have found time to have a little fun before we head home for Christmas.  The other night my roommate and I decided to make vegetarian egg rolls and taco pockets.  They were SO delicious.

 We also have been making crafts and had a few of our girls over to join in the Christmas festivities.  We ended up going to grab sushi and making a whole [very impromptu] night of it.  Our last stop was the new dueling pianos bar down the block.  They played a wide variety of songs, both old and new.  It was a BLAST.  We will definitely be going back soon!
Tonight we're planning on going to dinner somewhere nice, keepin' it classy.  Hopefully these next few days fly by since I only have two more exams left...5 sleeps till COLORADO.

Words to live by: Whenever I feel the urge to exercise, I lie down until the feeling passes.

After 4 years of D1 athletics, most forms of exercise are seen as torture haha, but recently my roommate and I have become avid users of our Wii Fit.  Clearly, it's a lot more challenging than you would initially think!

Today I'm really missing Colorado and my friends.  I was going through old pictures on my computer and a couple jumped out at me.  This one is of my cabin, Foxton #5.  It's the typical Colorado cabin...quaint, cozy, all of the above.  I spent so much time here growing up and have so many fond memories; it's definitely on top of my to-do list when I get home for Christmas.

THANKSgiving

Thanksgiving has always been a big deal for my dad's side of the family.  This year we were fortunate enough to have so many friends and relatives in town.  Although there were many highlights to my time at home, the best part was getting to spend time with old friends and meet new ones.  These past few days have been fun, maybe even a little too fun! Especially since the Avs decided to send me off with a victory full of goals, fights, and pure awesomeness.  Now, as I prepare to head back to Saint Louis for the next two weeks full of tests, papers, presentations, and finals, I'm more heartbroken than usual to leave...it's the feeling that only a true Colorado native can know and understand.  Until I return, you can bet I'll be dreaming of a white COLORADO Christmas.

Life after SLUFH

Four years ago, when I committed to play field hockey at SLU, I could have never imagined what I was getting myself into.  What started as a class of 11 very different freshmen blossomed into four confident senior leaders who had been to hell and back.  No doubt the four of us would agree that it was time for us to move on with our lives and enjoy our final semester of college.  Recently I've been reflecting a lot on the past and although at times I never thought I'd be able to finish and wished that circumstances had been different, I know I would not change a thing.  Some might think I'm crazy for saying that, but the roller-coaster ride over the last four years has prepared me to face any challenge in my future.  I know, without a doubt, I can overcome any obstacle that stands in the way of my dreams.  I've been equipped with the skills and knowledge to be a successful member of society, no matter what I chose to do.  As far as my fellow senior SLUFH-ers go, I know they will find happiness and success too.  Whether it be in the business world, classroom, kitchen, or across the globe, we will succeed and always be connected.  Our shared experience is something no words can even come close to explaining.  As we look forward to graduation in May and go our separate ways, we will all be leaving some part of us on our field, with our team, in Saint Louis.

Final Year @ SLU

My final year in St. Louis at SLU...It's been a very interesting (for lack of a better word) few years.  I've really gotten to experience a whole different lifestyle here in the midwest; different people, different food, just different.  Fall is probably my favorite season here though because the colors are so vivid, and there really are no words to describe the beauty.  Now that my roommate and I live downtown, I'm really excited to experience the city in a whole new light.  There's something new around every corner here...just don't walk north or cross the river.
